I’m baaaaaack!!!!!

It’s been about seven months.  I’m sure you’ve all missed me.  I’ve definitely missed writing.

First, let me say this will be my last post on Fitscally Responsible. Please check out (and follow) my new blog, anna christina: welcome to my world. It will be a more general blog.

What have I been doing the past seven months?

  • Traveling for work a lot.  I took a promotion that took over my personal life for a few months (but I love my job, so it wasn’t so bad).
  • Tough Mudder… it. was. awesome.
  • I turned 30!
  • I got married!!!!!!!!!!!  Here are two pictures:

I have opted to create a new blog because I think it better reflects my personality. I love fitness and financial responsibility, but I also have a wide variety of interests beyond those two topics.  I think I tried too hard to come up with something that would be catchy, rather than something that truly reflects who I am.

I hope you’ll follow me on my new blog so we can stay in touch!

The BEST few minutes of my life (up to this point)

I’ve been MIA the past few days because I’ve been celebrating.  Matt and I got engaged last week!  Yaaaaaaay!!!!

THE PROPOSAL

Wednesday night:

The gist of our conversation was:

Anna, “Should we go out for dinner tomorrow night to celebrate your new job?”  (it’s our tradition to go out for a celebration dinner when one of us gets a new job or promotion)

Matt, “Sure, should we plan to leave work by 4:30 so we have enough time to work out before we go to dinner?”  (we are training for Tough Mudder and a sprint triathlon)

Anna, “Sounds good to me!”

Thursday night:

I strolled into the house to find a candle lit in the kitchen, Farewell Milwaukee playing from the iPod dock, and Matt looking at me from the couch.  It was the kind of moment where I knew what was about to happen, but still wasn’t sure if that was really what was about to happen.   (One thing I knew for sure is that it was not the atmosphere for a 20 minute weight circuit!)

When I walked into the living room, I saw this on the coffee table:

Wine, candles, flower petals (from our Valentine's Day flowers), and the ring!

So, what did I do?  I went about my business and put my coat and shoes away.  This is the gist of what happened next:

Matt, “Come sit next to me on the couch.”

Anna, “What is going on here?”  (in the smiley tone, not the accusatory tone!)

Matt, “You’re the best thing that has ever happened to me and I’d love nothing more than to spend the rest of my life with you.  Will you marry me?”  (I was crying at this point)

Anna, “Yes, of course.  YES!!!”  (he is the best thing that has happened to me too!)

Then I slipped the bling on my finger:

After that, we drank wine, called our family, and went out for a great sushi dinner.   My camera was completely dead so I didn’t get any great pictures that night (of course, the one time I can’t find my battery charger!!!).

It turns out Matt didn’t plan to propose that night when we made our plans.  Stephen Vincent, the jeweler who made my ring, called him on Thursday to tell him it was ready and I guess he couldn’t wait!

DID I EXPECT IT?

I expected it to happen at some point because we designed the ring together in December, but I didn’t expect it to happen that night.  I honestly thought we were going to celebrate his new job (which we still need to do!).

THE SIGNIFICANCE OF THE DETAILS

Farewell Milwaukee.  Matt used to play their first album for me all the time when we started dating.  In fact, we went to their show at the Cedar in January:

…and here we are – all smiles at the show!

The bottle of wine.  I showed Matt how to etch glass in December and he went on a glass-etching frenzy.  He etched a ring on this bottle in December and I found out about it a few weeks later when I tried to bring it with us to a friend’s house.  He was insistent we couldn’t bring that bottle and I was stubborn about wanting to know what he had against a bottle of wine he hadn’t even tried yet!  He showed me the etching and we agreed to drink it after we got engaged.

The red candle holders.  They fit the occasion well and they belonged to my Aunt Kim.  She passed away unexpectedly at the young age of 49 in December.

I am not sure if I though we would move in slow motion, but it all happened much quicker than I expected.  One minute I was putting my coat away, and the next I was engaged (literally).  I am looking forward to marrying my awesome fiance!

Up until this point in your life, what are the best few minutes in your life?

What a whirlwind

I came home from work on Thursday to this:

I will write the whole story tomorrow since today will be another day of celebrating!

My other fun, but much less exciting, event was the Gopher hockey game last night. They lost but it was still fun!

Happy Saturday!

Chipotle Faux-rito

Ok, it’s a real burrito and it is from random stuff in my kitchen, not Chipotle. But, it tastes great and is only five points so it doesn’t seem real. It has the basic ingredients of a burrito but I’ll give you the rundown anyway:

• Multigrain Wrap (2 points). Brand: Tumaros
• Black beans with jalapeños (1 point for 1/4 cup). Brand: S&W.
• Greek yogurt as a sub for sour cream (1 point for 1/8 cup). Brand: Yoplait.
• Brown rice (1 point for 1/4 cup)
• Lettuce
• Red onions
• Cilantro

The best part of this burrito is it was completely thrown together at the last minute (and it is just as good as the quesadilla that was my very first post!). Yay for having pre-cooked brown rice and extra cans of black beans at the ready. 🙂

ps, part of the reason I am doing this short, random post about dinner is so I can see what a blog post from my phone looks like :).

It is Monthly Bagel Date Day!

This morning we had our monthly bagel date!

In 2011, we let our love of bagels get a little too crazy (they were nearly an everyday occurence for a while!) so we decided to have them once a month in 2012 and have fun with it by making it a date.  This month, we chose Bruegger’s Bagels because I had this coupon:

(who doesn’t love a good exclamation mark on a coupon?!  It’s like the coupon is just as excited about the deal as I am!)

Matt also had a coupon so we saved $3.58!  Needless to say, it has been a good start to our Sunday.  (Did you know that Bruegger’s has a unlimited refill mug club?  Abby describes it in a This Life in Motion post)

I have to admit that I debated this month’s date a little bit because the bagel and cream cheese is 12 of my 26 Weight Watchers points for the day.  I thought about dipping into my 49 weekly bonus points but I did plenty of that for my wine at Farkle night.

I plan to work out later today to gain activity points and rely a lot on hearty servings of fruits and vegetables to get me through the day.  I usually like to keep my breakfasts under 6 points, but the monthly bagel date is worth the splurge. 🙂

Speaking of breakfast and Weight Watchers, this is the awesome breakfast that Matt and I made after we got home from the Juvenile Diabetes walk yesterday (5 total points and it even has cheese!):

The egg scramble serves 2 and is 3 points per serving:

  • 2/3 cup Egg Beaters Egg Whites
  • 1/2 cup fat free milk
  • 1 tsp crushed red pepper flakes
  • bell peppers
  • celery
  • 1/4 cup shredded cheddar cheese

The Sara Lee Delightful bread is only 1 point per slice (most other breads are 2-3 points per slice)  and the apple butter is 1 point per tablespoon.

Where do you choose to splurge in your diet?  What is one of your favorite healthy meals?

I finally discovered Instagram.

Good morning and happy weekend!  Did you know it is National ‘Drink Wine’ Day?  Don’t mind if I do (tonight)!

It’s already been a productive Saturday for me.  I finally hopped on the Instagram bandwagon. I captured this picture of Sunny keeping an eye on the neighborhood for us (South Minnie is a dangerous place):

Keeping the neighborhood safe from squirrels (if we didn't hold him back by not letting him outside)

I discovered the semi-blurry feature and took a picture of the roses Matt got me for Valentine’s Day:

This is the level of romance I would have fake-puked at when single. But now it makes me 🙂 🙂 🙂

Matt had a great idea to make us omelets and coffee this morning.  Yum.

Did I eat this today or in 1927? Instagram is so sneaky like that.

Now, we’re listening to a little Otis Redding while we update our budget sheet (and I write this, of course).  “Updating our budget sheet” really just consists of making sure our expenses in our Excel file match our checking accounts online and that we have enough money to pay our bills the next few months (we do! yay for my budgeting system!).  It sounds boring but it is actually very exciting (or I’m just a huge nerd, which wouldn’t surprise me to learn).  One of these days I will get fancy and do all this work through a website like Mint.com.  For now, I am old-school and prefer to do it on my own in Excel.

By the way, (FYI) if you’ve filed your tax return, checked on the status online, and were told no information is available – that appears to be a mistake.  Refunds will be disbursed on the average schedule of 10-21 days.  The official message can be found on the IRS website here.

(this is Macy hiding from Sunny and keeping warm by the heater while we work at the table)

sweetest dog in the world

I have a magazine addiction (although it is not as bad as Colleen’s addiction!).  So, I have promised Matt that today I will go through my stack from the past few weeks.

evidence that I really am a "research junkie"

Yes, you read that right – I said the PAST FEW WEEKS.  In my defense, I got January and February at the same time since I just signed up for a few of them.  What can I say – I got too many good deals on the subscriptions to pass up and they’re great for when I travel.

I hope everyone enjoys their Saturday as much as I plan to enjoy mine!  I might get crazy later and make some Tuna Cakes (instead of crab cakes).  Maybe I’ll get ambitious and post the recipe 🙂
